Matt Moran’s acclaimed Aria has announced the reopening of its doors on 14th July, with a massive change to part of the restaurant. Although things haven’t quite started off on the right foot for their 20th anniversary year, for obvious reasons, part of the dining institution will be transformed into a dedicated, 1700-bottle wine bar showcasing more than 80 wines.
Aria has long-been known for its wine list, so this double-down will come as welcome news to the restaurant’s loyal fanbase.
“The team and I are delighted to be able to open our doors again and bring the very best in fine dining experience to Sydney”, said Moran. “The coronavirus has affected us like many others and the break has really challenged us to think about what’s next for Aria”.
Co-owner Anna Solomon, Moran, head chef Joel Bickford and sommelier Alex Kirkwood will all be involved in the new wine bar concept, finessing the space to provide a laid-back platform for rarities and favourites, backed by the traditional Aria dining experience.
Walk-ins will be welcomed at the bar, which will serve some new, casual snacks by Bickford alongside cocktails and glasses of wine as curated by Kirkwood.
The Aria Wine Bar kicks the next few months of changes for Aria, which includes a new tasting menu with dishes such as Kangaroo with palm heart and macadamia; organic pork jowl with caramelised persimmon and cauliflower; and returning favourite Aria Souffle with flavours of banana, muscovado and vanilla. The menu is being offered both as a either a three or four course a la carte menu, and a tasting menu.
Aria opens 14 July for dinner Tuesday to Saturday.
