If you live in Sydney then you are no doubt aware of how influential Applejack Hospitality have been to the small bar scene. They own and operate some of the city’s most popular and distinctive haunts including Bondi Hardware, The Botanist, SoCal, and most recently, The Butler. Now, the rapidly expanding hospitality group have announced a fifth bar to join their family of charming drinking holes. Titled Della Hyde, the new bar will be located at 34 Oxford Street in Darlinghurst and it’s official opening is expected for 25th November 2015.
Just a stone’s throw away from Hyde Park in a space that was ‘apparently’ once a grand hotel, Della Hyde will be a play on the luxe lobby bars that occupy high-end hotels around the world, fitted out with opulence and atmosphere in mind with a focus on glamourous cocktails and worthwhile bar snacks.
“We reckon it would have had a touch of opulence based on the Hawa Mahal or ‘Pink Palace’ in Jaipure, India”, said co-owner Hamish Watts while speculating on the former site of Della Hyde, “maybe it was a member of the revered ‘Society of Crossed Keys’…that’s our story and we’re sticking to it”.
With space for up to 150 people, the small bar will feature brick columns with arched beams, luxurious Chesterfield banquettes, period feature lighting, and mirrors with timber and tile floors all in tones of pink and grey with brass finishes.
A strong focus on DJ sets from local favourites will add the the late-night atmosphere, no doubt fueling the scene alongside a drinks list heavily curated by Applejack Group Bars Manager Lachy Sturrock, dedicated to classic and sophisticated cocktails with a twist, like the Cold-Drip Espresso served over ice.
Group Execustive Chef James Privett has blended European and North African influences for the food menu, aiming for dishes that are substantial enough for dinner while also being perfect as bar snacks. Dishes include Pea and Pancetta Croquettes with harissa mayo; share plates with spiced lamb, olive, onion, spinach, and labna pizza; and Paprika Chicken Skewers with parsley and barley salad. Like all grand hotels, the kitchen will be open late.
Della Hyde will be open from 5pm until late for 7 days a week. Doors will officially open on 25th November. The opening will conclude a planned month-long festival of events across all Applejack Hospitality venues, with the title “Applejack Celebrates”.
