Our nation’s capital has a new Italian restaurant with Molto Italian, which opened earlier this year on Eastlake Parade in Kingston, Canberra. Fashioned after a modern seaside trattoria with sleek interiors, high ceilings, and an open kitchen and bar with a featured wood fired oven, the large 130-seat restaurant is an ode to the classic look and feel of Italy brought into a modern setting. Molto focuses on being an energetic, passionate addition to Canberra’s dining scene, illustrated by the natural beauty of Lake Burley Griffin.
Carlo Tosolini (Former Tosolini’s Italian Restaurant), is at the helm of this new venture, drawing it’s energy from his love of the authentic Italian experience which has cultivated over 29 years of being a restaurateur. Tosolini has partnered up with Head Chef Giuseppe Pappalardo from Sicily, and Pizza Chef Giordano Renzetti from Rome, to do make Molto as good as it can be, with locally and internationally sourced produce including Mozarella that’s flown in once a week from Italy.
Where possible, menu items are made by hand in accordance with traditional Italian techniques, so those heading along can expect hand-cut pasta, wood-fired pizzas, and an extensive stuzzichini menu designed towards social dining. This will result in menu items like Hand Cut Pappardelle Bolognese, a selection of Pizza Rosse and Pizza Biance (with and without tomato base), and imported Mozarella and Burrata.
The drinks menu will be classic Italian with the likes of Negronis, Aperol Spritz, Americano, and Sgroppino.
