The high-end Shangri-La Hotel in Sydney’s The Rocks are partnering up with Manjit’s to curate a four day festival celebrating the many tastes and aromas of Indian culture and cuisine, showcasing various elements for the Bollywood-themed “A Week in India”. It will all take place in the hotel as Manjit’s Chef de Cuisine Varun Gujral teams up with Shangri-La Head Chef Bo Sorensen to draw on the Old World style of Northern Indian food.
Family recipes and street classics will characterise the food festival, including a 1940s recipe for Butter Chicken, the tropical lean of Prawn Malabari, and the tradition of central India’s Sikandari Raan (which is a leg of lamb that has been roasted with Indian spices). A buffet of marinades, curries, and sauces all made from Manjit’s secret family recipes will add a little colour while nearby a dessert station champions Indian sweets including Gulab Jamun, Mini Kulfi, Mithai Barfi and Halwa. This will take place beside Sorenson’s massive seafood selection, with all being available as a buffet lunch for $55pp from 12pm to 2:30pm Friday to Sunday. The buffet dinner ($80pp) is available from 6pm to 10:30pm, Wednesday to Sunday.
Commenting on his collaboration with the well established Indian restaurant, Sorenson offered: “Chef Gujral creates menus which are anchored in Indian culture, but reflect the creativity of modern Indian food while embracing local and unique Australian produce”, confidently giving the seal of approval as Sorenson prepares to welcome Manjit’s into Café Mix, where the festival will take place.
