Renowned chef Kylie Kwong will return to Carriageworks in a few weeks time, curating their next Night Market with 60 stalls popped up by some of finest names in the Australian food and drink scene. Right alongside all that deliciousness will be specially commissioned artwork, cooking demonstrations by Indigenous food producers, and a small but energetic program of live music.
With the aim of showcasing locally-sourced seasonal produce, some of the country’s best chefs will be on-hand to demonstrate to guests just how diverse native ingredients can be. Kwong was tasked with assembling a line-up more than capable of showing off the diversity of Australia’s abundant produce, which will be focused around bush foods and natural ingredients.
“The Night Market will celebrate and pay respect to our country’s vibrant Indigenous culture. We’re excited to share the diversity of unique flavours and textures of stunning native Australia flora and fauna like arrigal greens, saltbush, wallaby, munyeroo, yabbies, desert fruits, crocodile, lemon aspen, Moreton Bay bugs, quandong, sea parsley, sea blite and karkalla”, said Kwong. “Visitors will be able to sample unmistakably Australian dishes from some of the country’s most exciting chefs”.
Kwong will also be teaming with Artbank to present a new commissioned work by Yarrenyty Arltere Artists, designed in response to the celebration of indigenous culture and native ingredients. With the long title of ‘Those poor three women with birds on their heads: Lucky they have coolamons full up with bush foods!’, the work will display the collaborative talents of a group of women artists who go by the name of “the sewers of Larapinta’ (Dulcie Sharpe, Dulcie Raggett, Rhonda Sharpe, Trudy Inkamala and Marlene Rubuntja).
Guests can expect everything from The Edible Bug Shop to a who’s who of restaurants including LuMi Dining, Continental Deli Bar Bistro, Spice I Am, Almond Bar, Kepos Street Kitchen, No 1 Bent St, 10 William St, Stanbuli, Paper Bird, Nour and Fred’s. A huge range of dishes will be on offer, such as: minced kangaroo picadillo empanada (Fred’s); crab, avo, tobiko and finger lime toast (Paper Bird); housemade charcuterie featuring wallaby, kangaroo and other local proteins (NOMAD), humus graffiti with dessert lime and flat bread (Nour); pepper berry Bruny Island wallaby skewers with wattle seed yoghurt, snow pea tendrils and nasturtiums (Three Blue Ducks); steamed organic savoury pancakes with Mark Eather’s Moreton Bay bug tails, XO, munyeroo and Craig Shephard’s fresh sea urchin (Billy Kwong); and quandong macadamia sable tarts as well as plum and strawberry pocket pies (Flour and Stone).
Drink enthusiasts will be taken very good care of with the likes of brewers like Wildflower and La Sirene, Archie Rose Distillery, PS40, Spirit People, She Loves You (Newtown’s newest bar), and more.
