Hospitality group Applejack known for producing unconventional yet elegant venues (The Butler Potts Point, The Botanist Kirribilli, SoCal Sydney, Della Hyde) have launched a new restaurant and bar at their first Sydney CBD location, just a stone’s throw from Wynyard station on Carrington street.
Dubbed Bopp & Tone, founders Hamish Watts and Ben Carroll’s latest venture pays homage to their grandfathers Keith ‘Bopp’ Evans and Anthony ‘Tone’ Adams and is fashioned to reflect the optimism and opulence of the post World War II era they’d lived through. Designer Luchetti Krelle has successfully created a comfortable yet luxe experience, generating dark romantic ambience through rich leather furnishings, heavy timber and marble flourishes and vintage pendant lights.
An open style kitchen located toward the back of the restaurant features a beautiful wood grill and charcoal oven which churn out a diverse range of share food developed by Head Chef Sa Va’afusuaga and Group Executive Chef Jason Roberson. Locally sourced Mooloolaba Prawns basted in chilli, garlic, oregano and lemon, Pecorino doused with wild thyme NZ honey and pepper, Brooklyn Valley Sirloin served with Bearnaise and olive croute and Spiced eggplant with woodside goats curd and pistachio form part of the taster menu showcasing the venue’s culinary ethos and the freshest Australian produce.

Sommelier consultant Dan Simmons has curated a wine list that aims to champion those at the forefront of sustainable viticulture and oenology in Australia and abroad whilst Group Bars Manager, Lachy Sturrock and Bar Manager, Craig Kerrison have concocted a drinks list that includes tailored cocktails such as a Raspberry Spritz (Absolut Elyx Vodka, Crème de Cacao, Verjus, Raspberry, Pétillant Naturel, Soda) and a Pineapple Rizz (Pineapple Skin Riesling, Elderflower Liqueur, Soda, Lemon).
