With celebrated chef David Tsirekas taking care of the food, Sydney’s ambitious 1821 already has a lot going for it. Now they’ve gone and opened up a slick looking basement bar downstairs, a bunker bar named Odessa, with luxury notes of gold and velvet to match a menu that reads with a hearty list of cocktails and wine.
Tsirekas has also worked his magic down at this velvety lounge bar, which is located beneath 1821, filling the menu with bar snacks to go along with the muscly list of cocktails like Moscow Mules which sit right with a tightly curated wine selection and a focus on Russian super-premium Beluga vodka.
“We called it Odessa because Greek diplomats and generals, all who were exiled after the Ottoman occupation in Greece, lived in Odessa”, explained David. “The town of Odessa belonged to the Ottomans, but thanks to the help of friendly Russians and the assistance of Catherine the Great, the famous city was liberated”.
Though political and cultural history sit behind the bars name, the face looks to be an opulent slice of escapism, framed with plush, red velvet lounges and a serious sense of class. There’s even an exclusive bottle service for those living large, whereas regulars can purchase a bottle of Beluga and the bar will keep it in a display cabinet, under lock-and-key, with their names on a plaque next to it so they can enjoy their own personalised bottle on each visit.
The bar, which opens from Saturday 25th March, can be accessed either through a discrete street entrance or via an elegantly designed staircase leading down from 1821.
