With summer heating up the words “popsicle cocktails” are two of the sweetest things you can hear, and luckily for Sydneysiders the icy concoctions are currently being offered by a Belvedere Ice-Pop Bar which has been set up Hilton Sydney’s famed Zeta Bar. The well established rooftop bar will be pushing back against the relentless heat with a list of frozen Belvedere Vodka cocktails including smart twists on classic mixes.

A seafood menu curated by Hilton Sydney’s own executive chef will be offered at Zeta Bar along with these cocktails, pairing fresh catches with the likes of a citrusy Sgroppino with a lemon popsicle, an Americana with an orange and raspberry popsicle, and Espresso Lollypop that uses Belvedere, honey, caffe liquor, and a coconut & caffe popsicle.
In addition to the popsicle cocktails, another three summer-inspired mixes have been listed on the menu including a Bellini Collins, a simple Belvedere Mule, and Summer Apertico.
