If it ain’t burgers then it’s fried chicken. Sydney’s obsession with crispy, soul nourishing birds is about to be taken to the next level with Redfern based Cake Wines teaming up with Andrew Levins to curate a festival of some of the best damn fried chicken in the city. Taking place at Cake Wine’s Cellar Door, which a stone’s throw from Redfern station, the Birds of Redfern festival has brought together a carefully curated menu that reads as self-respecting fried chicken lovers dream come true.
Levins has put together a playlist of hip hop and soul to soundtrack the event, throwing out beats to add a bit of punch to lavish scenes of wine-sipping and chicken-chomping. Cake Wines have handled the drinks, selected some of their best locally made wines like their 2016 Pinot Gris and natural Pinot Noir from their Young Winemaker Series, along with craft beer from White Rabbit and Little Creatures.
Hartsyard will be on hand to offer out hot pieces of Southern Style HY Fried Chicken with HY hot sauce, ranch, and pickles, which is the exact same chicken that they named their cookbook Fried Chicken and Friends for. Neighbourhood favourite Moon Park are coming on board with some Korean Fried Chicken which is shrimp brined and served with soy, syrup, and a side of sweet pickled daikon. Chippendale legends The Lord Gladstone have come to do up some Fried Chicken Burgers. Newcomers Henry Lee’s Redfern, which is located right behind Cake Wines, have been invited on board to cook up some Sesame Fried Chicken which is served on a housemade brioche roll and topped with chipotle dressing, fennel, apple & radish slaw, and pickled cucumber. And finally ACME champ Mitch Orr will be collaborating with Levins under the name The Mitchen (which is also a Sydney food podcast), delivering both some Duke Bistro extra crisp fried chicken wings, and Hot Wings Buffalo Style with celery and ranch.
