Now in its sixth year, The Morrison Bar and Oyster Room’s celebratory, month-long “Oyster Festival” plans to spread plenty of events throughout the entirety of August. From 1st to 31st, there’s going to be plenty of oysters shucked around the expansive venue, with the Morrison team expecting to serve more than 17,000 of those shelled treats each week, complemented by a bespoke menu created by Sean Connolly as well as education masterclasses, oyster shooters, and of course $1 oyster happy hours each day from 6pm-7pm.
To better last year’s event The Morrison have even teamed with Young Henrys to create a special Oyster Stout called “Captain Barnacle” which is being described as a hybrid profile of salty and chocolate flavours. That’ll be lifted up by some beer and oyster education masterclasses (Tuesday 14th August) for anyone curious about pairing oysters and beer.
“Oyster Festival is one of my favourite times of year,” said Connolly. “The team and I get to showcase our love for Oyster and how diverse they can be on their own or in a dish. We collaborate with some of the best suppliers and producers around Australia like Frank Theodore from De Costi, who is also hosting a series of education masterclasses throughout the month”.
Those tucking into Connolly’s menu can expect a whole heap of experimental dishes including Southern Fried Oyster tacos with XO spiced oyster mayo, cabbage and crispy pig ear crackling; Chowder & Fries; Oyster Frites; Oyster Rockerfeller; and – our personal fav – the epic Carpet Bag Steak, which is an eye fillet stuffed with oysters, wrapped in prosciutto, and served with greens and café de Paris gravy.
Of course there’s a whole heap of other goodies, like oyster inspired cocktails, and a special “Dressed to Impress” range of oysters offering several dressing combinations for those who want to push a bit out of the typical serve.
