A Sydney sushi master is pairing sashimi with wine for this one-off omakase

If you’ve ever had the pleasure of eating at one of Sydney’s most popular, long-running Japanese restaurants, Masuya, or trendy Surry Hills gem Toko, then you’re familiar with the considerable touch of Sushi Master Toshi Oe.

With three decades of experience, the chef is rightfully considered Sydney’s original Sushi Master, and he’ll be popping up for two very special sushi-and-wine dinners this month at Woollahra favourite The Wine Library.

A special eight-course menu has been made under the concept of “Bluefin & Burgundy”, welcoming Oe to the wine-centric venue for a unique culinary experience across two dates.

This will include dishes like oyster moro miso, baby scallop Aomori, Nitenmori sashimi, eel emaki and wagyu beef; with the additional option of extra courses such as caviar bumps or fresh truffle infused Brillat Savarin cheese. It’s not your typical sushi omakase.

It’ll also be paired up with wine, should diners chose one of two add-on wine-match options. That’s either “off the beaten Burgundy track” for $95pp, or “premium king of Burgundy” for $190pp. This is in addition to the omakase, which is $150pp.

Wines shortlisted for showcasing on the night include Ghislaine Barthod, Laurent Roumier, Domaine Lignier, Prieure Roch, Geantet-Pansiot and Pierre Yves Colin Morey.

There will be numerous seating times on either day, with 20 covers per slot, so there’s plenty of opportunities to completely give your taste buds over to this unique dining experience. First, choose from either Sunday 19th July or Sunday 26th July, then pick a seating from 12pm-2:45pm; 12:15pm-3pm; 2:45pm-5:30pm; and 3pm-5:30pm.
