You can now get Vietnamese pho-inspired beef wellingtons in Sydney

The fusion between French and Vietnamese is well-recognised but hardly represented as well as it should be in Sydney.

There are exceptions. One of my favourite Vietnamese restaurants in Sydney, Hello Auntie, offers a masterclass in Vietnamese cuisine while paying homage to its French roots. And sister venue Hey Chu does it just as well.

In fact, Hey Chu is currently celebrating the fusion of both cuisines by offering a limited-edition Vietnamese Wellington, Not Pot Au Feu.

The CBD bar, which opened earlier this year as an homage to the late-night drinking culture of Ho Chi Minh City, is now serving this very limited dish from now until November 6th for $58.

Owner Cuong Nguyen has used pho flavours throughout the dish, which blankets a beef tenderloin in pho fat puffy pastry with pho spices, wilted spinach and a holy basil Vietnamese sate. Given the undying popularity of beef wellington, a pho-inspired version should go down a treat with Hey Chu’s Vietnamese-inspired cocktails. Pair that up with some of those smaller street food-inspired plates and you’re in for a good night.
