Milk & Honey Distillery, the first whisky distillery in Israel and the only one in the capital of Tel Aviv, has teamed up with homegrown distributor Alba Whisky to export its Classic Single Malt expression to Australia.
Along with its two award-winning gins, the Israeli single malt enters the local market off the back of an impressive worldwide expansion for the brand, which has already seen it maintain presence in the spirits scenes of France, Netherlands, UK, Belgium, Germany, Austria, and Poland.
Tel Aviv’s hot, humid climate means that whisky matures and takes on the characteristics of its barrel faster than would be usual. This means that younger statements may actually share qualities with older whiskies.
The Classic Single Malt is a three-year-old expression that has been matured in ex-bourbon and special red wine STR casks, said to imbue it with a light and balanced character alongside notes of vanilla, light oak, and light black pepper spiciness.
M&H follow the Scottish way of making whisky, although the team pushes for experimentation where possible. In the past, this has included a visit to different climate zones across Israel, like the Dead Sea where they are currently aging a whisky on the roof of a hotel. Seeing as it’s the lowest point on earth, what comes out of that barrel eventually should be of massive interest of whisky enthusiasts the world over.
