It appears that the recent collaboration between Koko Black and Tokyo Lamington was indeed a sign of bigger things to come, with the Tokyo-born dessert store officially opening a flagship in Sydney today.
Founded by N2 Gelato mastermind Min Chai and former Black Star Pastry alum Eddie Stewart, Tokyo Lamington is an ode to Australia’s favourite coconut-covered treat, expressed in unconventional ways with inventive flavours that include inventive takes on fairy bread, ferrero rocher, and lemon, lime and bitters.
Aussies got a taste recently when Tokyo Lamington was roped in by artisan chocolatier Koko Black, resulting in a limited edition collection that, unsurprisingly, sold like hot cakes.
The flagship store has now opened its doors in Haymarket’s Market City, popping a unique angle to the precinct’s already stacked food offering.
Those rushing to get there hands on Tokyo Lamington flavours can expect the spongey dessert to be treated with the likes of pandan, ube, lemon myrtle, black sesame, matcha and milk tea.
