Down in the depths of glamorous basement haunt Crystal Bar, part of the GPO Grand precinct, Sydneysiders will now a find a gourmet “cheeseburger collection” which has been worked up in collaboration between GPO Cheese & Wine Room and Prime Steak Restaurant. With a range of artisan farmhouse cheeses and Prime’s daily made tartare-inspired beef patties, a total of seven new burgers have been created, showcasing premium ingredients sourced from around the world and hand-picked by Carlo Colucci, who is the Fromagier at GPO Cheese & Wine Room.
Describing it at Sydney’s “best artisan farmhouse cheese burger collection”, the teams have curated this new menu to put the focus on specialty rich artisan cheeses and what they bring to the burgers, alongside high quality grilled-to-order meat and fresh ingredients.
“I have personally hand-picked creamy cheeses with sharp, bold flavours to complement the fresh ingredients on the burgers”, said Colucci. “I will also be changing the cheeses with the seasons to offer diversity and variety, and to ensure we’re using cheeses which are at their peak”. Think Truffle Brie from Coulommiers in north-central France, Blue Gorgonzola from Piedmont in Italy, and Gruyere Cheese from Gruyeres in Switzerland.
The team at Prime Restaurant, who recently introduced a premium meat-only degustation, have come up with their own recipe for a Black Angus beef patty, inspired by their signature tartare which is made fresh daily with 100% grain-fed Black Angus shoulder with an 80% beef, 20% fat ratio, seasoned with imported spices from France. The patty will be used in all burgers except two: a Chargrilled Chicken Fillet Burger which is crafted with housemade chilli sauce, creamy mayo, and fresh lettuce; and a vegetarian burger with Chickenpea, Sweet Potato, Sweet Corn, and Quinoa stacked with haloumi, gruyere cheese, roasted tomato chilli jam, and tahini cream. The cheeseburger collection is priced from $10.50 to $16.50 and is available now at Crystal Bar for lunch Mon-Fri 12pm-3pm, and dinner Mon-Tues 6pm-late; Wed-Fri 5:30pm-late
