One of the city’s most impressive rooftop bars, Henry Deane has given a refresh to its food and drink offerings in collaboration with chef consultant Brendan Fong, former Head Chef at Sydney’s world renowned Mr Wong, and Matt Linklater from Melbourne’s awarded Black Pearl. The impeccable views of the harbour and the city that define Henry Deane now hosts an array of coastal inspired dishes with an openness to Mediterranean, Middle Eastern and Asian flavours, as well as a new cocktail list created by Bar Manager Laura Persiani with Linklater.
Since its big-deal reopening in 2015, Henry Deane has given Sydney’s treasured Hotel Palisade a crown worthy of the iconic pub’s legacy, regularly attracting both locals and visitors with its ultra modern split-level bar and kitchen, offering one of the greatest perspectives of the city and its surrounds. Now it’s home to dishes like kingfish and coconut ceviche with taro crisps, smokey eel croquettes, baby octopus with chilli, garlic and labneh, and roll-your-own lettuce cups with flank steak, pickled onions, ssamjang and kimchi.
“I was naturally inspired by the venue’s spectacular location”, said Fong. “Henry Deane is such a beautiful spot to while away the afternoon, we wanted a line-up of dishes that were easy to share, can be eaten with your hands, and perfect to graze on as you make your way through the cocktail list – lunch through to dinner”.
That cocktail list he speaks of has been bolstered by newbies like The Trumped Sour, which is a mix of bourbon and winter berries, and the Yuzu You Fizz, a cocktail that’s designed to match with dishes like the scallops, ginger, shallot, and white soy butter.
Joining in on the venue-wide makeover is Hotel Palisade’s ground floor pub, The Public House, which also features a new menu thanks to Head Chef Martin Roberts and his twists in pub classics like the honey-glazed ham off the bone sanga with baby cos, heirloom tomato, red onion and tangy mustard mayo, and the braised Riverina lamb served with roast spiced pumpkin, and semi-dried tomato.
