Michelin-trained chef Ben Greeno has been leading the charge at Merivale’s The Paddington since it opened late 2015, and this week he’ll be overseeing the long awaited extension of that concept as the takeaway focused The Chicken Shop opens on Thursday 26 January. The small shopfront right next to The Paddington will be turned into an old-school chicken shop, peddling rotisserie meats, salads and sandwiches whipped up by Greeno and his team.
The ex-Noma chef will be using the same specially-imported, custom-made French rotisseries that drive the offerings at the nearby pub, aiming to please with simple and succulent chicken alongside a range of meats and seafood that will change every night. Think ocean trout, pork belly, lamb rump, glazed ham and beef rump on a daily-rotating specials menu. Then you’ll have the fresh salads, which make use of everything from ‘cos lettuce, avocado, radish and pumplin seeds to chickpeas, tomato, cucumber and feta.
The signature lunchtime sandwiches will fit in well with the work crowd, benefiting by using quality bread sourced from Brickfields with various fillings like glazed ham with comte, Dijon mustard and pickle; hot chicken with jalapeno and pickled carrot; and fish fingers with crushed edamame, yuzu and togarashi.
