Merivale’s The Paddington to open on Oxford Street this month (Sydney)

In continuing their massive list of new openings, hospitality giants Merivale are just about ready to unveil the first of what will be three new properties on Oxford Street, opening doors to completely revamped space which will now be known as The Paddington. Formerly The Paddington Arms, Merivale’s flashy new pub reno will be in good hands, with Executive Chef Ben Greeno coming on board with a CV that includes Momofuku Seiobo, Michelin-starred Sat Bains, and two time World’s Best Restaurant winner Noma. Yeah, this is kind of a big deal.

Greeno will be handling the menu which is led by rotisserie style meat, while the cocktails will be in they very capable curatorial hands of Sam Egerton and Toby Marshall (Palmer & Co), and the wine list will be refined by award-winning sommelier Frank Moreau and Adrian Filiuta.

Opening doors next week on Tuesday 24th November, The Paddington will be home to specially-imported, custom-made French rotisseries, forming the centrepiece of the pub and delivering dishes like Lamb Rump with red pepper and almonds, Wagyu Beef with artichokes, pickled mustard seeds, and watercress, Whole Stuffed Fish with olives, lemon, and thyme, and Roast Chicken with French fries. These will be part of the more substantial dishes on the menu while smaller plates range from Octopus to Smoked Trout with English muffin and duck egg.

“There’s no reason why the food can’t be as good and complex as a high-end restaurant, even thought it’s served in more casual surrounds,” said Greeno when speaking of his ambitions for The Paddington, “I want to create food that lends itself to a good time”. And that sentiment should be mirrored with The Chicken Shop, Ben’s other new opening which will be right next to The Paddington and serve take-away only rotisserie chicken, salads, and sandwiches.

Designed as if it was one big, old local butcher, The Paddington will boast a relaxed, British charm with white glazed ceramic tiles, painted timber paneling, dark timber furniture, upstairs booth seating, and a leather-fronted cocktail bar with mirrored tables.
