“Every dish has a story”, offers chef Chris Connolly (ex-Top Paddock) who spearheads the attractive new Abacus Bar & Kitchen with owner Dylan Whitmore. The new venture, which is positioned on Chapel Street nearby Prahran Market, is promising something new and innovative for the area, touting modern Australian with flourishes from Spain and North Africa.
With relationships set with some of Victoria’s best local farmers, butchers and artisan producers, the menu is brought to life with some fine ingredients which are designed to showcase seasonality and a paddock-to-plate philosophy from breakfast through to dinner.
Between shared plates and crispy wood-fried pizzas to local wines and craft beers (8 on tap at any one time) it’s looking like Abacus is going to be a very welcome addition for the busy area, especially with a list of inventive signature cocktails and rotating nightly specials.
Tony Proudfoot attended the recent launch night earlier this week, bringing our readers a good look-through of the venue and what to expect.
