Just a few weeks ago Chippendale hot spot The Chippo Hotel – formerly known as The Chippendale Hotel – welcomed in Charlie Fisher, an well accomplished Louisiana-born Head Chef who brings experience from working around England and Australia, as well as the Michelin seleted Castel Marie-Louise in France. With him, Fisher has brought a bit of that Cajun flavour to help drive the massive change, ensuring that a fresh facelift isn’t the only difference one will notice when they head along to the long-standing pub.
“Good ol’ fashioned pub grub with a lick of Louisiana” is what the team are using to describe the new menu, which riffs on favourites like Coconut Shrimo, classic Southern Fried Chicken and Yankee-Doodle Meatballs. Of course the kitchen still offers Aussie pub standards along with the new dishes, and they’ve even kept the Cheeky Cheeseburger as a nod to Cheekyburger, which was popped up in the hotel before the rebrand.
Alongside the changes will be a sharper focus on hosting live music events in the basement, highlighting local and independent bands, all of which will be across the venue on most Thursdays, Fridays and Saturdays. And what would a pub be without it’s themed local-friendly nights? Monday Trivia, Tuesday Comedy and Wednesday Improv will stay on the schedule, while Sundays are reserved for a Pig on the Spit style roast.
