Roxborough: Fitsrovia’s little sister set to make a big splash in St Kilda (Melbourne)

“…generous, rustic Mediterranean that is super seasonal with the focus on the ingredients,” is the style for Owner Paul Jewson’s new Acland Street restaurant Roxborough.

Founder of well-known St Kilda brunch spot Fitzrovia, Paul Jewson collaborated with partner Gian Marco Pugnaloni and friend Christian Bryne for Roxborough, with the aim to create a more sophisticated evening dining experience.

Named after Johnny Roxburgh, British party architect and bespoke caterer to celebrities, as well as Paul’s mentor, the venue boasts a welcoming, open and warm vibe in cafe hybrid dining. Sharing a common space with the established Memo Music Hall providing providing Acland street with some extra Melburnian colour to the neighbourhood.

Rustic Mediterranean influences are found all through the menu promoting seasonal Victorian grown produce with big flavour profiles like pickled Australian Herring and Molten Smoked Mozzarella gratin.

St Kilda local and Head chef Christian Byrne has over 20 years of experience running kitchens in Melbourne and the Long Island, NY, where he learnt the skills of lobster boiling, crab cakes, clam strips and the raw bar.  He also draws influence from his wife’s hometown, San Sebastian, adding the classic flavours of Basque country to the menu.

Dinner guests can expect home-grown dishes such as grilled Lakes Entrance octopus with charred bullhorn peppers, persillade and saffron aioli; and stuffed artichokes with minted peas and leeks. For lunch, the grilled fillet of cobia with piperade Basque, Mornington Peninsula mussels and roast fennel jus is said to be a standout.
