Sydney institution Carriageworks is doubling down on their incredibly popular food program this year, announcing a number of events and a special conversations series that will address current issues in the industry.
Central to this program will, of course, be the Carriageworks Farmers Market which returns in July for a winter theme, but there will also be plenty of other essential happenings including chef masterclasses, “Mad Mondays” – a continuation of the evening talk series founded by René Redzepi in Copenhagen – and free monthly Farmers Market demonstrations.
Aussie chefs Rodney Dunn, Analiese Gregory, and Clayton Wells are all up for the chef masterclass series in the coming months. Kylie Kwong will be curating MAD Mondays in August and November, with a yet-to-be-announced line-up of speakers from across and beyond the food industry. And Biota’s James Viles will be coming on board as the curator for June’s Winter Night Market.
Viles’ line-up will continue the night market tradition of big, exciting line-ups, curated along a theme of “WILD”, focusing on seasonal and ethically-sourced ingredients. The usual live cooking demos and entertainment will also feature, with the full program to be revealed mid-May.
“Wild food not only means wild edibles, it also means using the entire ingredient. I want to encourage visitors to Carriageworks Night Market to think inventively about where to source and how to use the entire ingredient”, said Viles. “This gives us a profound respect for what we are about to eat, and how we eat it. It also flows into a mindful life practice, a less-is-more approach to day to day living”.
Chef masterclass and Mad Mondays will run throughout the year. The Winter Night Market is set for Friday 19th July from 5pm with tickets priced at $10 (free for children under 12). A full schedule of upcoming events and tickets can be found at carriageworks.com.au.
